Quick Steuben

Quick Steuben

Pre-heat oven to 350 degrees F.

6 strips of bacon, cooked and cut into small pieces
2 c sliced onions (in rings)
1/4 c. butter
1 cup saltine cracker, crushed into small crumbs
1/2 lb cheese, sliced
2 large eggs, slightly beaten
3/4 c milk
For seasoning:
  salt, black pepper and parsley flakes
Partially cook bacon and remove from skillet, add the onion rings to the bacon fat and cook until golden.
Add bacon (now in pieces) to onions and set aside.
To the slightly-beaten eggs, add the milk.
~ Melt butter in a 10-inch ovenproof dish.
~ Add cracker crumbs and pat firmly into the bottom of the dish (as if making crust)
~ Line the dish with cheese slices.
~ Spread over this the bacon & onion mixture.
~ Pour over all the eggs & milk mixture.
~ Dust with salt, pepper and parsley.
~ Bake at 350 degrees F about 30 minutes.

 ~  Serves 4-6 people.
