New England Cole Slaw
chopped cabbage (for eye appeal, you may use 2 colors of cabbage)
apple cider vinegar
For flavor, plan to make this a minimum of an hour ahead of serving.
Mix together mayonnaise and vinegar to taste, but gradually, to keep the mixture slightly tart (mayonnaise should be under-used).
Combine mayo/vinegar mixture with cabbage.
Add seasonings to taste.
Refrigerate for an hour or more before serving.
