Cucumber Pickles

Bertha Charity Hawxhurst (Tyson) – via daughter Elizabeth Tyson (Tilton)

Cucumber Pickles
1 quart sliced cucumbers
3 large onions
2 large peppers
1 pint vinegar
1 cup sugar
1 TBS celery seed, white mustard, and allspice

~ Sprinkle salt over all and let stand for 4-5 hours.
~ Add vinegar, sugar, celery seed, white mustard and allspice
~ Squeeze cucumbers dry and add other ingredients.
~ Boil 1 hour, then can.
(The canning process should be strictly followed to avoid bacteria and spoilage.)
Elizabeth wrote at the end simply: “Good.”
